Tasting notes

Taster Rob Allanson

Nose: A salt tang and cigar box smoke, distant peat – it’s not too full on. Quince jelly, clove spice and cranberry crackers.
Palate: Here the peat starts to make itself know a little more, open fires with peat briquets. Red grape juice and a hint of coconut. There’s chocolate here, almond and strawberry jam.
Finish: The smoke lingers on with the sweet cake edge gradually fading.
Comment: This is a really interesting mix of smoke and sweetness, layers wave over you one after another.

Taster Christopher Coates

Nose: Charred salmon with sweet beets and a glass of red wine. Anise and liquorice stick, followed by smoked cheese and raspberry jelly with milk chocolate.
Palate: The raspberry is here, with smoked almonds and lemon boiled sweets. A touch of red bean paste and coconut ice.
Finish: Medium length, with roasted red apples.
Comment: Dinner at a sea-side restaurant. An enjoyable balance of smoky and fruity flavours that is out of the ordinary.
