Tasting notes
Taster   Dave Broom
Nose: Very young and slightly unformed. Malt and the rubberiness of immaturespirit with some floral character behind.
Palate: Clean and sweet with a crisp spiciness mid-palate that brings to mind wildflowers. Lightly honeyed.
Finish: Hot and tight.
Comment: It's young, but the spirit is clean and sound.

Taster   Martine Nouet
Nose: Grassy, sweet. Drying hay. A bit grainy. Hint of demerara sugar. Infused vanilla pod. White tea.
Palate: Smooth. Very sweet. Quite cloying. The same grassy profile as the nose. Vanilla syrup. Getting spicy.
Finish: Drier, spicy. Ginger. Lemon zest.
Comment: A sweet character, lacking balance of course. Not surprising for a work inprogress. Very much cereal-centered. Not sure it is interesting to bottle such an infant.
