Tasting notes

Taster Phoebe Calver

Nose: Initial burst of salted caramel chocolate buttons, followed by nutty cookies dotted with plump raisins.
Palate: Things get richer, with an old, slightly dusty armchair, toasted cinnamon and raisin bagels with Nutella spread on top, and that salty note lingering.
Finish: The raisins almost become tobacco, with more of that leathery chocolate hanging around.
Comment: This is rich and complex, certainly something to give some time to in the glass. Sit back, relax and simply enjoy.

Taster Christopher Coates

Nose: Crème frâiche, subtle lime juice, crumbly Wensleydale with apricot pieces and roasted broccoli with butter. Banana fritter and red apple.
Palate: Full. Richly creamy, with ripe pineapple, lime juice, coconut cream, and butter icing. Vanilla syrup over almond cake, whipped cream and grated lemon zest. Sour physalis and tart green apple. Delicate cinnamon and nutmeg, with icing sugar.
Finish: Medium. Evolves into fried plantain.
Comment: Simple at first glance, but complexity unfolds when given time.
