Tasting notes

Taster Christopher Coates

Nose: Caramel, tamarind, turmeric, and the banana and pear notes of fermenting wash, with sweet cooked mash. Pipe tobacco and fermenting pineapple. Composting grass cuttings. Chalk dust.
Palate: Full. Dried pineapple pieces, toffee apple, butterscotch sauce, banana bread with candied walnuts. Candied citrus peels and Christmas mincemeat. Smoked red apple. A little pear drop.
Finish: Medium-long, on red apple.
Comment: Very complex, captivating flavours, but a touch hot. I’d like to return to this once it’s mellowed further.

Taster Bethany Whymark

Nose: Golden syrup and flapjacks. Dried apple, and dried pineapple rings. A slight barnyard-like, sour-apple note and a hint of sawdust. Dandelion and dusty bookshelves.
Palate: Light. Ripe pear, more dried pineapple, and a hint of lychee. Caramel and wafer milk chocolate bar. Sugar Puffs. Oat cake and cream cheese. Slight medicinal note. Water makes the fruit notes juicier.
Finish: Medium, leaving honey-nut cornflake cereal.
Comment: A drop of water made this sweet, fruity character a little easier to handle.
