Tasting notes

Taster Phoebe Calver

Nose: Like a walk through a forest in spring: cedar trees, pine needles on the floor. Caramel drizzle, lemon and apple peel.
Palate: That freshness is still there, with more pine and citrus fruit notes, followed by a kick of crystallised ginger spice and honey.
Finish: Quite dry with more of that ginger prickle.
Comment: I really enjoy the freshness that the nose brings and the way it delicately follows through.

Taster Christopher Coates

Nose: Upfront is a cream bun, yuzu, clementine and a touch of aloe. Chamomile tea and honey, too. Vanilla sponge and very faint lily. A hint of pan-fried salmon skin lurks behind the citrus.
Palate: Light-medium bodied, with a slight ‘effervescent’ tingle. Yuzu is upfront, with green apple and white grape. Sugared almonds and a touch of vanilla ice cream.
Finish: Short-medium. The sugared almond note rises and then falls away, leaving apple skin.
Comment: A bright and clean dram, evocative of spring.
