Tasting notes

Taster Lyndsey Gray

Nose: A rush of stone fruits with peaches in syrup and apricot flesh dominate with touches of grapefruit zest, gorseflower, toasted mahogany and hot maple syrup developing nicely throughout.
Palate: Warm and spicy with toasted wood notes, grated nutmeg, gingerbread and a dash of Peychaud’s bitters. Fresh fruits have transformed to stewed apricots and rhubarb.
Finish: A light, oily finish with spice carrying through as well.
Comment: Very well balanced and giving every flavour receptor a wee workout.

Taster Rob Allanson

Nose: Flinty and with a touch of minerality. Cherry pips and roasted almonds. All butter croissants stuffed with almond paste and apricot jam. Toasted burger buns. A little citrus edge.
Palate: At first this is all forest floors, moss, bracken, a leafy edge. Then it begins to sweeten up with roast peaches, syrup and pineapple cake. A little chilli honey too.
Finish: Goes back to keeping things gentle and light. Dries with cederwood and yellow-fleshed melon.
Comment: Pretty impressive and layered.
