Tasting notes
Taster   Phoebe Calver
Nose: Fresh mint tea, then nail varnish remover and fir tree. Grapefruit with peaches in syrup and ginger chunks bringing fire.
Palate: More of that fir tree, wrapped in rich salted caramel chocolate. Apple skins, and a kick of liquorice and peppermint. A layer of orange marmalade on rye toast.
Finish: Toffee and rye spice with a hint of that chocolate and liquorice on a medium-length finish.
Comment: I could sit and drink this exactly as it is for hours. Balanced and comforting – like a hug with an old friend.

Taster   Christopher Coates
Nose: Dubbin, blackberry preserve, Okonomi sauce, and stewed red apple. A little clove and tarragon. Whisp of wood smoke.
Palate: Medium bodied. Hard dry cider and vanilla, stewed orchard fruits and berries, followed by pistachio butter and date. Golden syrup and more red apple, dipped in toffee.
Finish: Medium-long. Ends with skin-on peanut and red apple.
Comment: A slightly spiritous edge lurks behind an otherwise pleasing well-balanced dram.
