Tasting notes
Taster   Phoebe Calver
Nose: Like stepping into grandad’s garage while he’s working on a car: oily cloths and tar. Earthy bog notes, a little sage and peaches.
Palate: More dried earth, then salty pork chops on the barbeque. Medicinal notes of tar, calming sage and poached pear on top of an almond frangipane tart.
Finish: A long finish that leaves you with marzipan and chilli heat.
Comment: This is interesting, although not one for me. The balance of complex flavours really develops through the palate – it is certainly one to try.

Taster   Christopher Coates
Nose: Danish oil, pear drop and capsicum. Hot-smoked salmon with paprika on white toast. White chocolate.
Palate: Medium bodied, with heat. Stewed orchard fruits: pear, apple and plum. Delicate smoke and a little cloudy apple juice. Some orange oils. In time, gentle caramel and vanilla emerge.
Finish: Short and led by pear skin and orange oil, with gentle tannin.
Comment: Solid flavours, brought down by being a touch hot.
