Tasting notes
Taster   Phoebe Calver
Nose: Day after a bonfire smoke, with a hint of sweetness like toasted marshmallow, orange peel, baking spices, and pear and almond tart.
Palate: A combination of sweet barbeque smoke, followed by more of that citrus note. Nutty biscuits filled with almond and pecan, cinnamon spice and sweet berries.
Finish: The bonfire notes really linger here, with red berry notes and the cinnamon spice lasting out.
Comment: There is a dominant smoked note, but it has been carefully worked to show balanced highlights. A beautiful job.

Taster   Christopher Coates
Nose: Coal smoke, petrichor, tilled earth, and wood bark. Eucalyptus, milk chocolate and some treacle. Pretzel dough. Subtle cherry boiled sweets and cola bottle sweets. Water brings out rubber bands.
Palate: Light bodied but hot hot hot. The cola cube is back, with burnt toast and smoked ham. Pear drop and candied almond. Lots of water tames the heat, but reveals ‘birthday balloon’ rubberiness.
Finish: The intensity fades quickly, but the low-level smoke lingers with almond nuttiness.
Comment: The nose was intriguing, but I’d like to try it with more time in cask.
