Tasting notes

Taster Dave Broom

Nose: Touch of freshly varnished wood. Dried cherry, cumin seed and some hickory with underlying sweetness. It becomes jammy and almost damson like, but always a deep scented oak. Water brings out caraway seed.
Palate: The perfumed note carries on. Lemon balm and zesty spiciness. Quite high tannins. Cigar smoke and drywood. Water lightens and smoothes.
Finish: Hints of bitter cherry stone.
Comment: Assertive but balanced.

Taster Dominic Roskrow

Nose: Beeswax polish; tinned peach, spice.
Palate: Classic sweet candy then swings left with a hit of oak and rye.
Finish: Sharp but nice sugar and spice balance and a dash of anisette for good measure.
Comment: Classic old fashioned style bourbon and nothing wrong with that.
