Tasting notes

Taster Bethany Whymark

Nose: Husky. Farley’s Rusks, soya milk, golden syrup, and creamy milk chocolate. Hot buttered brown toast. Coriander seed, ground ginger, golden raisins, porridge, and a little saffron.
Palate: Medium. Orange marmalade on sourdough toast. Spicy crystallised ginger. Black treacle, Parma ham, coriander seed, black pepper, and nigella seed. With time, chocolate malted milkshake.
Finish: Medium-long. On pithy orange juice and hints of rose petal and spearmint.
Comment: A sweet and spicy delight with well-integrated alcohol.

Taster Christopher Coates

Nose: Pineapple juice, baked banana, rice pudding, and a whiff of vegetable stock. Underneath, emulsion paint, caramel cookies, dried apricot, and date.
Palate: Medium-full. White chocolate, chewy vanilla cookie with toffee pieces, and tahini. Poached pear with brown sugar baked into puff pastry. With time, baked red apple and cinnamon. A little avocado.
Finish: Medium-long. On milk chocolate with cinnamon. Gently drying.
Comment: Like eating cinnamon French toast with fruit.
