Tasting notes
Taster   Rob Allanson
Nose: Bags of charred oak, a dose of alcohol prickle, a little ash and plenty of oak. Underneath there is vanilla pod and chilli honey. A little rye spice ripples through with salted caramel.
Palate: Sweetness washes through after the alcohol dissipates. Plenty of caramel, vanilla sugar and allspice. Some layers of cherry compote. Black peppercorn and cloves.
Finish: Long, big and full of heat. The oak grips, the spice sends tingles, then the fruits soothe.
Comment: A big, bold cracker of a Bourbon that demands attention.

Taster   Christopher Coates
Nose: Toffees and butterscotch sauce. Camp coffee and milk chocolate with honeycomb — think Crunchy bar. Pencil shavings and cinnamon stick, followed by dried apple and Medjool date.
Palate: A little hot at first. With time comes dark chocolate and espresso, black treacle and clove spice. Some peppery elements and solid tannin structure.
Finish: Hot and spicy, with red apple.
Comment: A bit unruly at first, it took a little taming. The patience does pay off though, if one perseveres.
