Tasting notes

Taster Phoebe Calver

Nose: Peppermint cream, a combination of lime zest and white wine vinegar, creamy all-butter fudge, physalis, and icing sugar. Skin after swimming.
Palate: Gentle umami notes of honey roast ham, figs in syrup, blackcurrant and more of that buttery fudge. Resinous and spicy with a little clove and ginger covered in syrup.
Finish: Those syrupy fig notes linger with sweet ginger balls in syrup for a medium gentle finish.
Comment: Well blimey. I don’t have a bad word to say about this; it’s complex and well tempered.

Taster Christopher Coates

Nose: Fermenting pineapple and lime pickle, spearmint toothpaste, Greek yoghurt and blood orange. Sour cherries, peaches in syrup, candied ginger and lemon meringue pie.
Palate: Mango ripened to perfection. Sweet-and-sour sauce, ripe pineapple chunks, honeycomb (the real stuff) and butter shortbread.
Finish: Deliciously creamy. Those sweet-and-sour notes fade slowly.
Comment: Wouldn’t change a thing about this one.
