Tasting notes
Taster   Phoebe Calver
Nose: This is lovely – festive with dried dark fruits, raisins and prickly sweet spice. Then an apple crumble all wrapped up in a rich peated blanket.
Palate: That richness remains, with peat smoking off a camp fire, followed by Christmas pudding, citrus fruit, lingering oak throughout, ginger and nutmeg spice.
Finish: A lovely combination of that strong smoked peat with some sweetness, like a salted caramel chocolate bar.
Comment: Beautifully balanced under the pressure of bold peat.

Taster   Christopher Coates
Nose: Raspberry jam on fromage frais, cranachan, milk chocolate, honeycomb, and woodsmoke. A touch of pine, under layers of toffee.
Palate: A trifecta of smoke, forest fruits and sweet cereal. Sweet caramel chocolate, with a little Maldon sea salt. Smoked waffle (if such a thing exists) with fresh breakfast fruits: strawberry, honeydew, white grape.
Finish: Long. Becomes nutty as the tannins dry.
Comment: A complex blend of fruit and smoke. Not sure if it’s breakfast or dessert, but something is on fire.
