Tasting notes
Taster   Rob Allanson
Nose: The shoreline after the tide has gone out. Warm stones and a saline quality. Smoked undyed haddock. Apricots in brine. A little chilli spice and whisky laden oak.
Palate: The peat smoke takes time. First there’s liquorice, treacle toffee, gorse in bloom and hints of custard. Icing sugar, lemon marmalade and citrus running through.
Finish: Takes its time and slowly dries with aromatic spices and treacle toffee. Hints of pineapple too.
Comment: Venerable, velvety and lemon-scented loveliness. Give it the time it deserves.

Taster   Lyndsey Gray
Nose: Lemon meringue pie, blackcurrant jam, toasted brioche and chilli infused rock salt. White chocolate covered raisins, star anise, orange infused syrup, and sandalwood follow.
Palate: Sea salt stewed peppermint tea leaves, sage, torched orange peel and cauliflower cheese. An undertone of a distant wood smoke and seaweed.
Finish: A bitter and chalky consistency with herbaceous notes to finish off.
Comment: A packet of Sun Maid raisins and then some tobacco infused chocolates.
