Tasting notes

Taster Bethany Whymark

Nose: Porridge with sultanas and golden syrup. Vanilla pod, tuille biscuits, shaved fennel, peppery rocket, and porcini mushroom. Satay sauce (peanut, coconut, lime). A hint of rubber shoe sole.
Palate: Medium. French toast, icing sugar, maple syrup, Black Forest compote, and espresso-soaked sponge fingers. Roasted chestnut, fried mushroom, and a little ground coffee bean.
Finish: Medium, on the black coffee-sponge fingers combo and walnut.
Comment: Dark and delightful.

Taster Christopher Coates

Nose: Quite delicate. Waxed leather, leaf mulch, petrichor, dried mushrooms, and delicate florals, perhaps lilac.
Palate: Medium-full. Subtle white mushroom, delicate woodsmoke, and very well-integrated dried forest fruits. Sultanas and red apple.
Finish: Medium, on dried red apple.
Comment: A little water opens this up nicely.
