Taster   Dave Broom
Nose: Full: clootie dumpling mix, chocolate, toffee then nut, coal/smoke.
Palate: Medium rich. The smoke clings to everything: soft cakey fruit and apple and as it dries walnut bread.
Finish: Smoky.
Comment: Very well balanced.

Nose: Vegetal. Peppery. Aromatic.
Palate: Dry, firm, chewiness. Lots of flavour development. Sooty. Smoky. Oaky. Sappy. Orange pith and zest.
Finish: Surprisingly lively, spicy. Faintly medicinal.
Comment: A grizzled old character, but gains points for resilience.
