Tasting notes

Taster Christopher Coates

Nose: Cherry cola, chicory, and camphor wood. Sticky toffee pudding and bergamot. Black tea and violet florals. Potpourri.
Palate: Light-medium bodied. Amarena cherry, dark chocolate, coffee cake with toffee sauce, and Turkish delight. Red apple and some brown sugar-topped crumble. Blackcurrant wine gums and oak leaf wine.
Finish: Long. Sweetens considerably with time, as stewed fruits emerge.
Comment: Firmly placed in the foraged fruits and preserves flavour profile.

Taster Bethany Whymark

Nose: Oat crackers and tarragon butter. Fragrant cedarwood. Butterscotch ice cream and burnt sponge cake. Lemon peel and cooked apricots.
Palate: Medium-light bodied. Freshly baked butterscotch cookies. Wholemeal toast and apricot jam. Coconut macaroons, and white pepper.
Finish: Medium, on those butterscotch cookies and fragrant clove.
Comment: I would sip this with a cube of ice to mellow its oaky grip and enhance those fruity notes.
