Tasting notes
Taster   Becky Paskin
Nose: An overwhelming hit of butyric acid and bonfire smoke. Lots of caramel and sticky fruit in damson jam, sweet figs and a couple of overripe strawberries.
Palate: Mouth-coating and a little sour, with Austrian smoked cheese dominating. The dark fruits fight with blackberries, strawberries and damsons, which mingle nicely with the smoke.
Finish: Smoked Edam and fruit chutney.
Comment: For me the butyric acid is quite pronounced, but it’s not always a negative quality. This is still an interesting dram.
Taster   Rob Allanson
Nose: Full-fat fresh milkshakes with blackcurrant syrup. Cherry ice cream with caramel wafers. There’s smoke, wood-smoked duck with cherry sauce.
Palate: Warm straw and creamy goat’s cheese. But then there’s fruit coming through, strawberries and black pepper spiciness. Olive oil flatbreads and a little charred wood.
Finish: That charred wood stays, tempered by blueberry compote.
Comment: Delicious and a good mix of savoury and sweet. The cask seems to have exerted a little too much influence on the liquid.
