Tasting notes
Taster   Martine Nouet
Nose: Intense. Aerial smoke with a tary note. Briny as well. Raw fish.Wet grass by the sea. Citrussy. Lemon pulp. Fruit comes in waves. Ripe peaches, ripe pears.
Palate: The same profile as the previous sample but with a creamier texture and more body. More citrussy too and less smoke.
Finish: Not as dry as the previous sample. Delicious aniseed after taste.
Comment: The smoke is behind the screen. So well balanced and enticing. Keep it for the pudding. Orange pannacotta?

Taster   Dave Broom
Nose: Pale and quite austere. Plain oak (lumber yard, sawdust). Wet stones. With water, freshly plastered wall.
Palate: Oily and slightly smoky. Intense flavours all concentrated on the front of the tongue. Slightly nutty with a grassy edge.
Finish: Hot and smoked.
Comment: Underwhelming.
