Tasting notes
Taster   Bethany Whymark
Nose: A bit like rarebit – toasted sourdough, cheese, and sharp mustard. Then ground almonds, caramelised sugar, lemon zest, oat biscuits, cooked meringue, cut grass, and cilantro.
Palate: Medium. Fresh doughnuts with powdered sugar. Vanilla bean paste, golden syrup, baked apricot, fresh strawberry, and brown-sugar oat latte. Hints of coriander and wholegrain mustard.
Finish: Medium, on toasted pine nuts.
Comment: Quite boldly flavoured for a whisky at its proof.

Taster   Christopher Coates
Nose: Oil paints, boot wax, paper and inks, toffee cake, and condensed milk. Apple pie with lots of brown sugar and custard.
Palate: Medium. Apple flan, mandarin segments, and buttered croissant. Bisongrass and sweet, milky tea.
Finish: Medium. On vanilla custard and applesauce.
Comment: A trip to the bakery and home for tea.
