Tasting notes

Taster Bethany Whymark

Nose: Burnt (and I mean black) toast with salted butter. Oily garage cloths and a little medicinal note. Molasses and fresh vanilla pod.
Palate: Medium bodied. Sweet, marinated pork with barbequed peach slices. Mango with a hint of chilli and smoked paprika. Later come maple syrup, milk chocolate chunks and blackcurrant cordial.
Finish: Medium-long, with peaches and pineapple left to roast on the embers of that barbeque.
Comment: A commendable balance of smoke and sweetness that I could sip all night.

Taster Christopher Coates

Nose: All-butter croissants, filo pastry and modelling clay. Iodine, tarragon and eucalyptus. Pear cordial. Elderflower wine. Heather, gorse and fresh oregano.
Palate: Light bodied. Delicately smoked salmon with cream cheese and blinis. Pear and elderflower cordial. Toasted sourdough with lots of butter. Somewhat yeasty. Oregano-infused olive oil. With time, nettle tea, fresh blueberry and honey.
Finish: Long. The smoked salmon note lingers.
Comment: A fresh and intriguing dram with nuance that belies its ABV.
