Tasting notes

Taster Phoebe Calver

Nose: Sticky toffee pudding with chunky dates, vanilla pod custard, stewed plums and cinnamon.
Palate: Dry and light, with a hint of toffee becoming sawdust, vanilla fudge and heather. A nudge of chilli dark chocolate and clove.
Finish: Medium length, with sawdust, heather and chilli warmth.
Comment: I had high hopes and there’s plenty of good but the palate does leave a little to be desired.

Taster Christopher Coates

Nose: Intense prune juice, cherry jam and blackberry sauce, with dark chocolate and liquorice. Christmas pudding with boozy cream.
Palate: Medium-full, with some ginger heat. Intense mixed red berry, jammy sweetness. Lots of raisin and prunes in syrup. Some tobacco elements.
Finish: Long, on the raisin note.
Comment: Tasty, but a bit unbalanced. It’s had a little too much sherry cask influence for the new spirit to handle, I think.
