Nose: Liquorice, fried salmon skin, sesame oil, and a herbal edge of dried dill. Some wood smoke, eucalyptus, and freshly baked wholemeal loaf. Dried fig and sultana, too.
Palate: Medium. Sweet dried fruits, figs and prunes in syrup. A distinct, sweet nuttiness, like Florentine (chocolate coated, candied almonds). Some delicate wood smoke, liquorice with vanilla fondant, and baked pear with lots of sugar. A savoury umami note, too, like fried white fish in butter.
Finish: Long, on figs and walnuts.
Comment: Balanced sweet and savoury.
