Tasting notes
Taster   Rob Allanson
Nose: A savoury punch, peat, not full on, more distant. Sort of isn’t there and then it is. Apple compote, sweet cured salmon and roast barley. Like opening a big paper bag of sugared Jelly Tot sweets.
Palate: All that apple sweetness hits first then the smoke rolls in, everything from open fires to smoked fish. Hits of sea salt too.
Finish: Long with sea salt caramel ice cream and charcoal crackers.
Comment: Lovely balance and interplay between the smoke and the sweetness.

Taster   Kate Packwood
Nose: Huge smoke and a subtle plastic note like Play-Doh, then orchard fruits, stewed apricots and Earl Grey tea, a gentle sea salt note of smoked bacon.
Palate: Orchard syrup and honey sweetness, followed by parma ham, ginger snaps, apricot kernels and marcona almonds, then maple bacon pancakes and a faint hint of soft leather.
Finish: Bacon smoke lingers, balanced by the honey sweetness and long, ginger snap spice.
Comment: Sunday morning breakfast of maple bacon pancakes and a mug of Earl Grey tea. Pretty heavenly.
