Tasting notes
Taster   Phoebe Calver
Nose: Like walking into a pottery studio. Wet clay, light sweet peat, a hint of rosemary, physalis fruit, brioche bread and butter pudding.
Palate: Wow, that light sweet peat is now like falling over in a bog. Still the sweetness of icing sugar, but there’s chilli heat, smoked bacon, almond paste and a hint of vanilla pod.
Finish: Lingering earthy peat, rounding out with poached pear and sweet spice.
Comment: Although the palate is not particularly delicate in its peat, there is enough complexity to have me going back for more.

Taster   Christopher Coates
Nose: Intensely savoury: black bean, coffee, miso and smoked beef jerky. Beneath, red apple and manuka honey. Candied ginger and nutmeg. Physalis and flan base.
Palate: Medium bodied. Smoked fruits (red apple, pear) with rice wine and quince. A pleasant cashew note emerges slowly. More of that beef jerky, too.
Finish: Medium-long. Ashy, then the red apple becomes assertive.
Comment: There’s something baijiu-y about the nose, but the palate brings us solidly back to Scotland. A nice drop, but not quite complex enough to edge higher.
