Tasting notes
Taster   Christopher Coates
Nose: Pencil shavings and sultana. Icing sugar and marshmallow, with plenty of fresh green apples and pears. There’s a lime soda zing to boot.
Palate: The lime note is back. This time I’m thinking of key lime pie, without the pastry. There’s pear drop and a touch of apple-skin tannin. Milk-bottle candies and candied ginger.
Finish: Medium and fades on that sweet pear drop note.
Comment: A little hot, but there’s some lovely flavours in here.

Taster   Phoebe Calver
Nose: Creamy vanilla. Then green apple skins, sweet allspice, butterscotch frosting on top of a vanilla cupcake and some giant rum-filled raisins.
Palate: Peppery spice fills the mouth, followed by some more of the green apple skin, resinous dry wood, fresh ginger, Christmas cake fruit and a solvent kick of nail varnish remover.
Finish: The heat really lingers, leaving the sweet apple skins and a white pepper warmth.
Comment: There really is rather a lot of heat here, however, beneath that is a bit of a sweet treat waiting to happen.
