Tasting notes
Taster   Becky Paskin
Nose: It needs some time (and water) to open up, but when it does you’re rewarded with dried fruits – lemon peel, raisins, orange zest, dates, a hint of PX Sherry and nuts.
Palate: Surprisingly easy to drink at such a high ABV, but with a touch of water it bursts into life, with vibrant citrus peel, dried fruits, macadamias, wood spice and PX sweetness.
Finish: Fruity, nutty and long, with a touch of charcoal on the end.
Comment: This is a beautifully balanced whisky, I’m excited to see what this distillery does next.
Taster   Rob Allanson
Nose: Takes a little time to emerge from under the ABV without water, but it’s full of buttery Eccles Cake and sherry-soaked raisins. Cinnamon and clove spices build.
Palate: Big and full of baking spices like a hot-cross bun out of the oven. Custard vanilla slices. Caramel sauce. Oat flapjacks with dried apricots and coconut.
Finish: Long and takes its time, warming too as those spices start to take hold.
Comment: A lovely drop that takes water well if needed. Rammed full of sunshine-laden fruits. Time for a picnic.
