Tasting notes
Taster   Phoebe Calver
Nose: It’s trifle, with red berry jelly, a thick layer of vanilla custard and whipped cream. There’s faint hazelnut, buttery vanilla sponge fingers, and sawdust.
Palate: A sweet smokiness, with a touch of fisherman’s friend that is quite drying. Still that sweet strawberry jelly underneath, rich treacle and an almost Horlicks-like note and bitter green stalks.
Finish: Medium finish, leaving warmth and sweet dry oak.
Comment: It wasn’t what I was expecting, but I’m quite into that. Considering the ABV the heat isn’t overpowering.

Taster   Christopher Coates
Nose: Sponge fingers with raspberry jam, whipped cream and almond flake. Milk chocolate and stewed plums with brandy.
Palate: Medium bodied and somewhat dry. Black tea, liquorice stick, clove, chinotto and sage. A retronasal furniture polish note.
Finish: Medium-long, with clove and bergamot orange. A suggestion of smoke, but could be an illusion.
Comment: Bittersweet and amaro-like. The overall effect is quite dry and this lack of balance is what keeps it just shy of the 8s.
