Tasting notes
Taster   Christopher Coates
Nose: Herbal. Tarragon, sage and basil. Some subtle medicinal notes. Porridge with honey and clementine segments. Apples and pears roasted with lots of burnt brown sugar. Pine and tree bark.
Palate: Medium-full bodied. Intense, with ginger heat. Concentrated tropical notes of ripe pineapple and papaya, with honey-coated granola. Raisins, sultanas and dried apple pieces.
Finish: Medium-long. Tropical notes give way to caramel and tannins.
Comment: Quite complex, but the heat could do with taming.

Taster   Phoebe Calver
Nose: Interesting. Warming amber and sandalwood hints. Creamy mascarpone, herbal heather honey and tarragon leaves, physalis fruit and a little nutmeg.
Palate: A real undertone of earthiness comes through here, becoming medicinal and pretty hot. Green tomato stalks, chilli heat, and cocoa butter moisturiser.
Finish: Heather honey survives the heat on this long finish.
Comment: Water will be your friend here – it’s hot hot hot.
