Tasting notes
Taster   Phoebe Calver
Nose: Wensleydale cheese with cranberry, almost verging on cream cheese, sliced melon, snap peas, dried grass and sandalwood.
Palate: Much warmer, with sage crackers, dried cranberry, fig and mascarpone. Resinous, with heather honey and stem ginger heat. More Wensleydale creaminess and wheat.
Finish: Medium and calm, with a nod to fennel and heather.
Comment: There’s a very enjoyable complexity to this; I love the journey from fresh to warm and cosy. Set up a chair in front of the fire and enjoy.

Taster   Christopher Coates
Nose: Peaches in syrup with whipped cream and vanilla ice cream. Ripe banana and pencil shavings. A little diluting orange.
Palate: Medium-full bodied. Intense peach and pear notes, with blossom honey and orange flesh. Delicate lemon-lime boiled sweet notes and just a touch of tannin dryness to balance the fruits.
Finish: Medium. Fades out on orange flesh, with a little pith.
Comment: A very, very drinkable Highlander.
