Tasting notes

Taster Bethany Whymark

Nose: Brandy-drenched Christmas pudding with fresh custard. Citrussy Lancashire cheese. White grape and pickled walnuts. A little leather and wood varnish. Ground ginger and cumin.
Palate: Medium-full. Notably voluptuous texture. Vanilla latte, fresh nutmeg, ginger cake, molasses, and sweet figs. Dry-rubbed barbequed beef. Salted caramel-filled chocolate truffles and a little leather.
Finish: Medium-long. The fruit cake notes crescendo, with creamy hazelnut.
Comment: Very good company for a long, cold evening.

Taster Christopher Coates

Nose: Orange drizzle cake, with almond flour sponge. Churros with brandy cream. Cocoa powder, shaved nutmeg and cinnamon stick.
Palate: Medium-full. Clementine, nectarine and delicate candied citrus peels. Deep-fried puff pastry, olive oil, sesame and golden syrup. Delicate white bread base notes. Fried plantain. Concentrated tropical notes of mango and passionfruit, too.
Finish: Medium, with the clementine note lingering.
Comment: Liquid marmalade on toast.
