Tasting notes
Taster   Chris Goodrum
Nose: Aromas of moist honey coated barley and sawdusty, mature American oak. Grass, minerals, pepper and earthy smoke. The fruit takes on the aged, tropical demeanour.
Palate: The mature honey is to die for! Luscious and sweet with a balancing minerality. Again slightly tropical: melon, apricot and banana. Tannins creep in but it’s still fresh.
Finish: Long, lightly smoked and dry. The oak begins to bitter a little but there’s still some honey attempting to offset.
Comment: Stunningly mature. There may be a wrinkle or two, but wrinkles come with age!

Taster   Martine Nouet
Nose: Malty. But with an unusual lactic note which makes me think of Reblochon cheese (an alpine cheese with wild herb notes). A yeasty note (raw bread dough). Vanilla yogurt.
Palate: Crisp. Another unusual note. Fruit flavoured candy. And a cardboardy touch.
Finish: Short, quickly fading with a gingery aftertaste.
Comment: Something different here. The flavours are unusual. The structure is perhaps not well balanced. A young whisky? Special finish? I am not sure.
