Tasting notes

Taster Bethany Whymark

Nose: Sweet yeasted buns with chocolate chips. Malted milkshake. Clove, cardamom and cumin. Cherry-flavoured black tea. Dried apricots, roasted chestnut, lemon-scented polish, and sweet peat.
Palate: Medium-full. Sweet smoke comes forward like barbecued pork ribs. Rich chocolate ganache and pecan nuts. Vanilla latte with lots of ground cinnamon. A hint of cigar box. Deliciously malty.
Finish: Long, on rich malt, milky spiced coffee, and sweet bonfire smoke.
Comment: A glassful of delights to pick over and savour slowly.

Taster Christopher Coates

Nose: Mossy bark, pencil shavings, and tilled earth. Rosemary, eucalyptus and slate dust. Malted milk drink, liquorice, and star anise. A touch of coal dust.
Palate: Medium body. Strong retronasal aromas of petrichor and coal smoke. Liquorice stick, aloe vera gel, and a base note of milk cookie. Subtle lychee, green banana and lemongrass. A soft herbal note, like dried oregano and basil mix.
Finish: Long. Fading smoke, anise and oregano.
Comment: A delicately smoky, herbal dram with a light touch from the wood. Lots to unpack.
