Tasting notes

Taster Christopher Coates

Nose: Ricotta and fried pastry, with pistachio and candied pumpkin. Marzipan and candied orange on a vanilla sponge with pears poached in caramel sauce. Like Sicilian cassata cake.
Palate: Medium. Fresh apricot, peach and caramel. Intense baked apple and pears with sweet icing and marzipan. Subtle citrus peels over sweet shortcrust pastry, just starting to burn.
Finish: Long and sweet, on the candied fruits.
Comment: Complex and mature-tasting. This is some serious quality from England. Bravo!

Taster Phoebe Calver

Nose: Toasted brioche with a sweet red berry compote, toffee latte with oat milk and vanilla cream. There’s a little nutmeg and smoked bacon.
Palate: Lovely rich compote of red berries, followed by dates, raisins and candied peel, and vanilla. Apple pie, with cinnamon and heather honey.
Finish: A relatively long and warm finish, with more of the red berries and that heathery note lingering.
Comment: There’s a lot going on in here, perhaps not entirely cohesive at all times but is interesting to sip on.
