Tasting notes

Taster Dave Broom

Nose: Planed oak fir, pine but this also has apple, barley-sugar. Honeycomb on toast.
Palate: Sweet, but also nutty. Marzipan, an estery lift alongside that distinctly Canadian silky feel. Good length.
Finish: Long mingling sweet and spicy.
Comment: It's almost like a pudding whisky, but has balance.

Taster Martine Nouet

Nose: Sweet, lots of caramel that obliterates all other aromas. Just a hint of mint coming through.
Palate: Sweet at first then shifts on to the oaky side. A hint of liquorice and a bitter astringency.
Finish: Short, bitter.
Comment: All that caramel dress up seems to hide an immature spirit. Has it been aged in decent wood? One can wonder.
