Taster

Nose: Phenolic. Creosote. Smoky. Obviously coastly. Not much behind the smoke. A distant touch of vanilla maybe.

Palate: Sweet. Malty. Cereal bowl. Gets drier and smokier.

Finish: Smoky,dry,sooty

Comment: Judging by the colour (pale chardonnay),has obviously not gained from the cask. Has got all the phenolic spectrum but not much more,especially on the nose.

Nose: Extra virgin olive oil,with underlying tar and embers,then honey and vanilla.

Palate: Toastyness overlain by a wave of creamy vanilla,honey and malty notes,with underlying dryness,then\rchocolate eclair,lemon tart and lemon zest emerge.

Finish: Oakey smokeyness,lemon tart,then oak dryness.

Comment: Lemon notes add variety and illuminate the\raccompanying characteristics.
