Nose

Hints of damp paper, then green wine gums, gooseberry and lime. Herbal notes of crushed mint and it becomes more mineralic with time, with flint and damp moss.

Palate

A clean agave freshness with poached pear, followed by Gomme syrup and bubble gum on the sweeter spectrum. There was some bitterness like grapefruit

Finish

Crisp and cleansing, with a grainy grip.

Refreshing and summery; it would make a great mint Julep.
