Taster

Nose: Big sherry. Hint of sulphur and a butyric touch. Oaky. Dried fruit. Overcooked damson plums. Orange marmalade. Bitter chocolate. Plus an earthy note which lingers around.

Palate: As expected, on the oaky side. The butyric note of the nose is fading. Bitter. Burnt caramel, chocolate. Touch of chilli.

Finish: Dry and spicy.

Comment: Classic good sherry maturation. Nothing to complain about.

Taster

Nose: A little sulphury at first, a hint of ripe blue cheese then it becomes all sweetness, demerara sugar and maple syrup. Tomato stalks, old lilies and a hint of beef roasting in the oven.

Palate: Masses of Christmas pudding and almond skins. Bitter elements mixed\rwith dark honey, sherry notes and dunnage warehouses.

Finish: Spicy with a little bitter note.

Comment: A small lovely sherry bomb for post dinner conversations.
