Nose

Wonderfully herbal: sage, eucalyptus, and tarragon. There’s vanilla and a whiff of lavender and rose water. Beneath it all is a foundation of rye bread, dusty hayloft, white pepper spice and green bell pepper.

Palate

At first, it’s all sourdough bread and delicate pepperiness, then comes green apple, vanilla custard, orange boiled sweets, and mascarpone.

Finish

Medium-short and just a tiny bit mushroomy, with pistachio and rose.

Completely left of field but really very tasty.
