Taster

Nose: Ah hello, smoke and salt loveliness, plates of chargrilled fruit, pineapple and peaches, together with prawns and lobster tails. Hints of woody pine resin too. Coal tar soap with a little minty edge.

Palate: Full-on smoke hits first, then chilli and paprika heat. Smoked tea with milk chocolate. The chilli takes a honey edge before the fresh wood smoke comes back again.

Finish: Long and smoky, chocolate cheesecake and peppermint oil.

Comment: The peaty side of Islay and at its best too. OA log burner full of peat briquettes.

Taster

Nose: Delicately fruited and floral, with some jasmine and lemon posset alongside salty pebbles and the dying sooty embers of a bonfire as well.

Palate: Creamy and almost fatty, it really coats the mouth. Lemon rind and vanilla crème play with delicate peat smoke and there’s a subtle salinity to it.

Finish: Crisp peat smoke and citrus oils. Lovely and long.

Comment: This would be excellent paired with fish or a lemon meringue pie.
