Taster

Nose: Blossom honey, aloe vera, linseed oil, woodsmoke, eucalyptus, sourdough, petrichor, pomegranate molasses, flapjack, lily pollen, and black treacle.

Palate: Medium-light bodied. Blossom honey, olive oil, waxy apple, tarte tatin, and creamy brie. Sweet and savoury cereals, reminiscent of oat cake. Dry, with green tea tannin. Delicate jasmine floral notes.

Finish: Medium-short. Drying, playing out on the jasmine tea and honey notes.

Comment: Like eating real honeycomb and creamy white cheese on an oatcake.

Taster

Nose: White toast, heathery honey, rolling tobacco, and iodine. Lemon and orange sherbet. Oatcakes, toffee apples, coffee grounds, chicory and thyme.

Palate: Light-medium bodied. Herby salad and cider vinegar first, quickly capitulating to sweet peat notes, heather honey, toasted sourdough, burnt rosemary, and touch of bonfire ash. Cloudy apple juice, baked pears and a little golden syrup.

Finish: Medium-long, on bonfire ash, sourdough, and apple juice.

Comment: This sips well, but I think it also has great highball potential.
