Nose

Intense red apple, almost Calvados-like, and dark chocolate truffle. Golden syrup, clove and soy sauce. Cinnamon and cocoa-dusted almonds. Prunes in syrup. A suggestion of wood smoke.

Palate

Medium-full bodied. Honeycomb and strawberry gummies, peanut and more cocoa. Medjool dates and nougat. There’s a slight meatiness to this, too.

Finish

Roasted chestnuts, tart apple and cocoa linger long.

This is one of those sherry casks that’s hit the perfect balance of sweet, tart and savoury.
