Taster

Nose: Creamy Wensleydale cheese with apricot chunks. Some soft tarragon, followed by heather honey, old oily leather and pear drops.

Palate: Earthy smoke. The leather has become dusty, with dried apricots and freshly baked sourdough bread. More heather, with cedar wood and powdered ginger.

Finish: Dries into ginger spice, with that creamy cheese note returning.

Comment: This is pretty unique. There is good complexity and development from the nose through to the finish.

Taster

Nose: Raspberry and blueberry fromage frais, cloudy green apple juice, blossom honey, and sweet flan base. Some top notes of kiwi fruit, lemon juice, physalis and underripe pineapple.

Palate: Medium bodied. Lovely tropical notes of dried mango and pineapple. Sweet pastry with syrup and pistachio, like baklava. With time, sweet rye sponge, cream, and honey. Green grape and natural yoghurt. White pepper, nutmeg and clove.

Finish: Medium, on pistachio and pastry.

Comment: Beautifully mature tasting and very sippable.
