Nose

Like standing on a beach on Islay as the salty waves hit the rocks. There’s a wonderful salinity here with notes of honey, rubber, lemon peel, and white cake. With water, those notes stick around but it becomes more floral.

Palate

Lighter in flavour than anticipated. Needs some water to open up. Once added, there’s some very gentle salty smoke, with strawberries, red-skinned apples, and soft sponge.

Finish

A nice lingering sweetness.
