ABV 50%
It’s nice and well balanced, but it doesn’t develop as much as I’d have liked.

Nose: Sweet and dry hay, a touch of apricot Wensleydale, creamy and fresh. Mulchy and slightly veering towards compost, but then there’s a sweetness of icing sugar and a hint of Armagnac and pencil sharpenings.
Palate: A farmyard on a warm day, sitting on hay bales. It’s drying and soft. Plain porridge with a drizzle of honey, hot sand, and peppery spice.
Finish: Medium and drying, with the hay lingering.
Comment: It’s nice and well balanced, but it doesn’t develop as much as I’d have liked.
Score: 7.2
Taster
Nose: Light and zesty. Gentle lemon-lime, honey water, icing sugar, soft cream cheese (like Philly), with subtle fermented fruit notes bordering on the farmyard-esque.
Palate: Light and easy going on the palate. It’s distillate forward and a touch youthful but tempered by stewed apples and pears, vanilla cream and jasmine tea.
Finish: White grape, vanilla and gentle green tea dryness fade quickly.
Comment: Points for putting distillery character front and centre, but I’d like to revisit when it’s older.
Score: 7.6
