Nose: A hit of wood smoke, that leads into salty barbequed pork. This savoury edge is balanced out by a chocolate soufflé, with orange zest.

Palate: The smoke has sweetened up, with green apple skins, apricots in syrup, pork belly, and vanilla white chocolate.

Finish: Lingering syrupy sweetness and barbeque smoke.

Comment: This is right up my street with the sweet and fruity smoke notes. It’s just the right balance, without being too intimidating.

Taster

Nose: Pine sap, Fisherman’s Friend lozenge, wood smoke, pickle brine, Key Lime Pie, white chocolate, polenta and mozzarella sticks. Orange oils, rose, anise and coal.

Palate: Medium-full bodied. Smoked fruits (pear, apple, honeydew melon), and milk chocolates with strawberry cream filling. Delicate iodine, subtle ricotta cheese and brioche.

Finish: Long, with the full palate experience fading slowly.

Comment: Layered, balanced and full flavoured. One couldn’t ask an Ileach for more.
