Nose: Smoke and sherry goodness, this is a most welcome autumn tipple. Preserved lemon citrus, black treacle, Parkin cake and burning leaves in a tin bin: hot, metallic and mulchy. Cherry and vanilla tobacco smoke.
Palate: Smoked salmon and cream cheese bagels, that mix of sweet bread and salty oily fish. Smoked beer pickles. Tea tannins.
Finish: Roasted chilli heat comes in first, then is lengthened with honey and lime juice.
Comment: Now this would be interesting as a base for a smoky Tommy’s Margarita and that is a very good thing.

Taster
Nose: A dollop of whipped double cream on barbequed mango slices with a sprinkling of apple chips, pistachios and toasted walnuts. Sea salt flakes and buttered corn.
Palate: Grassy and vegetal notes of chopped parsley and coriander with scallops served up on cauliflower purée and sweetcorn. Followed by juicy mango flesh, cranberries, marzipan and sandalwood.
Finish: Juicy and nutty. Salty and fragrant. Barbequed.
Comment: If you could drink the perfect summer evening…
