Taster
Nose: Bay leaf, delicate orange blossom, pickled ginger and sultanas. Cumin, coriander, and cantaloupe melon. Some peach syrup and sawn oak. Subtle petrichor.
Palate: Medium-full. Somewhat oily. Elderflower and pear cordial, honey-soaked sponge cake, cocoa and pistachio butter. Tarte Tatin with a big spoonful of slightly sour cream.
Finish: Long, on caramelised pear and sweet shortcrust pastry.
Comment: Delightfully dessert-like.

Taster
Nose: Sweet red berries, covered in single cream with a sprinkling of cracked black pepper. Lovely dried oakiness with some cinnamon spice.
Palate: Like an afternoon tea selection of cakes. Victoria sponge with delicate strips of strawberry placed on top, a dusting of icing sugar and drizzle of heathery honey.
Finish: The peppery notes from the nose return, complemented by the delicate honey which lingers.
Comment: Enjoyable interplay between the heat of the pepper and the sweetness and light coming from the other notes.
