Taster
Nose: Delicately perfumed notes of blackberry, lavender, sage and violin rosin. Some white miso and oyster sauce. With water, sage, charred pork chops, plum sauce and a hint of black truffle, too.
Palate: Medium. Intense Portobello mushroom fried in butter, milk chocolate, dates, and cashew nut. Raisins and beef stock, with blackberry compote and more truffle.
Finish: Medium-long. The truffle-y notes fade slowly leaving lingering roasted almond.
Comment: An unusually savoury style but I think it will prove popular.

Taster
Nose: Crunching into a crumbly ice cream cone, with a big old scoop of vanilla ice cream in it. Then comes the fruitiness of orange segments, with brown sugar and pine cones.
Palate: Gets a lot brighter with fruit notes of orange, melon, and syrupy peaches with a dollop of cream. Some heathery honey arrives, and a bitter note.
Finish: The bitterness emerges as a square of 85% dark chocolate, balanced by sweet fruit.
Comment: Plenty of character in this. It could be really refreshing as a highball if you didn’t fancy sipping on it neat.
